This quarantine is driving me crazy. I lost count of how many days I’ve been in my house. The only thing I know is that it’s been too many. Today I was doing the usual, watching TikToks, when I remembered the old days where I used to go to my Aunt’s house during the Holy week to make “Empanadas de piña”. This is a very traditional food during this week. I went out to the kitchen and started looking for all the ingredients. Unfortunately we did not have any pineapple jam. This got me upset so I went to ask my dad to take me to the store to get some jam. However it was about 5:00 pm which meant we couldn’t go out because of the national lockdown. That made me even sadder, but it did not stop me. I looked up a video of how to make pineapple jam from scratch. It did not seem that hard, so I decided to try. My mom told me it was too hard and that I was not going to be able to do it. I told her I still wanted to try. I mean there wasn’t anything to lose anyway. The video said it was only going to take 45 minutes, however it actually took me around 3 hours. I was standing up for 3 hours stirring the pineapple with sugar. Because it was cooking the pineapple it was too hot and I couldn’t turn the A/C on. The good thing of all of this is that it turned out very good. My mom was very impressed and so was I. 

The next step was to do the dough for the empanadas. I looked up the recipe and it was easy but not fast. It took me some time to actually make the empanadas. It only took 25 minutes in the oven. Surprisingly they turned out too good. I made around 25 empanadas total, an hour later there was none. Which was the reason why I decided to make some more the next day. 

This was a very exciting activity. I learned and grew as a cook. This was my first time making pineapple jam and even though it took a long time, it was a really nice experience. I made a lot of it because I used a whole pineapple. Since there was some left, that’s what we have been using for every breakfast since then. It is natural and it does not have any chemicals which makes it healthier. With experience I learned that it is healthier to make this kind of food at home. Is not hard, neither is expensive and is way more healthier than consuming the ones that are sold in the supermarkets.
