As someone who grew up in a Hispanic household, peppers and spicy foods have been a huge part of my culture. I thoroughly enjoy spicy foods, but I can definitely agree with the fact that building up your tolerance isn’t just too spicy food but to your tolerance against it. To me, the difference between hot and spicy have to do with two things, temperature and capsaicin levels. Hot has to do with temperature, and spicy has to do with the effect capsaicin levels leave in your mouth.
